Description: Food and Health Justice in Chicanx-Latinx Communities
This course critically examines research methodologies and interventions of food and health justice in
Chicanx/Latinx communities with particular attention to Colonialism, Indigenous and Holistic
approaches, Decolonial Movements, Mental Health, and Reproductive Health. In addition to readings on
Chicanx/Latinx histories, students will develop research and community projects that show the various
ways in which Chicanx/Latinx peoples are struggling for access, equity, and sustainability in their local
communities.
